Additional Product Information
This rye bread is made with simple, wholesome ingredients: whole rye flour as the base, filtered water, natural sourdough starter (wild yeast), and sea salt. The natural starter replaces commercial yeast, allowing the dough to ferment slowly over 24 hours. This long fermentation enhances the depth of flavor, improves digestibility, and develops its characteristic chewy texture and rich, slightly tangy taste.
For best results, allow the dough to ferment at a stable room temperature (around 20–24°C / 68–75°F) to develop its full flavor and structure. Avoid rushing the 24-hour fermentation, as this slow process is key to achieving the bread’s signature tang and chewy texture. Handle the dough gently to preserve the air pockets formed during fermentation, and lightly flour the surface before shaping to prevent sticking. Bake in a well-preheated oven—ideally with steam during the first minutes—to help create a crisp, well-developed crust while keeping the interior moist and tender.
